PIERRE GAGNAIRE

COOKING ON INSTINCT

Guided by his instinct, Pierre Gagnaire is among the world’s leading chefs. With three Michelin stars to his name, his signature structured style is defined by its focus on drawing out the authentic flavours of locally sourced, natural ingredients: “nature dictates my cuisine and gives it meaning”, he explains. For Gagnaire, each dish is composed as a work of art – from the preparation to the presentation – transmitting not just flavours but feelings.

AN UNPRECEDENTED DIALOGUE

During Designart Tokyo 2019, an unprecedented dialogue between nature, wine, design and art took place at Pierre Gagnaire’s eponymous restaurant in the city. The three-Michelin starred chef welcomed the House and 30 special guests to an enchanting banquet featuring the Metamorphosis glassware collection by fellow Artisan of the Wild Andrea Mancuso. As well as an exclusive menu designed to complement the House’s cuvées, the evening was filled with engaging conversation and surprising moments; a taster of what was to come at Design Miami/2019.

RECONNECTING WITH NATURE

Maison Perrier-Jouët revealed “A Banquet of Nature” for the very first time during Design Miami/. Reinvented nature was omnipresent throughout the evening, but its greatest expression was on the plate, with a menu designed Pierre Gagnaire. Breaking from the conventional structure of a meal, the dishes were presented in unexpected ways and served as a succession of surprises. The floral, complex style of Perrier-Jouët cuvées perfectly complemented Pierre Gagnaire’s seasonal, nature-infused cuisine, both as a wine pairing and an ingredient.
